Is there some kind of way to just block an image in one person's signature? I don't want to block all signatures and I'll ignore the person if I have to but I'd rather not.

Unfortunately, no. Even putting the member on ignore will not block their name and avatar.
 I think you have to block all pictures/images.

Dear Griffe, it is possible to block one image (through their HTML address) in a persons signature. What type of browser do you use? (IE, Firefox, etc?)
Let me know, and I can walk you through it, ok?

 Wouldn't you be blocking all images from that site (of course, if all the images there are pitiful, that's a good thing.)

It really depends on the browser you're using, but I know how to block certain images on Firefox and on Internet Explorer
