So I have absolutely no problem cooking just about anything anyone wants. This can be a great thing sometimes but other times this can be a curse. It's a curse when you cannot narrow your choices down

I am going to a potluck for a Super Bowl party. I want to make so many different things but it is a potluck not a catered affair. I do not have to cook for everyone and their mother. I need help narrowing down what on earth to take. I figure I shouldn't take more than 2 things.

It is important to me to have at least one vegetarian dish. I do not like meat and I want to make sure there is something for the vegetarians that may show up just in case. usually these parties have chicken wings and meat balls and all that protein stuff.

I would like some suggestions on what you would like to see at a party. Veggie or otherwise accepted. I want something a little bit unusual. I am not doing chicken or meatballs. Those are too expected.

How about a delicious veggie chilli with cornbread or a yummy potato salad as a side??

I ALWAYS think of the veggies. I absolutely hate going somewhere and not having any options when it comes to food except for maybe the stupid veggie tray. LOL

I like vegetarian chili. That might be a great idea and it is pretty easy and travels well. I was also wanting to do something a little lighter since often times there is a lot of heavy foods at these parties (not to mention the beer).

Unless you are thinking mixed vegetables, I like to take 'cucumber rounds'; they're easy to make, light, and refreshing especially when you know there are going to heavy dishes like at a superbowl party. They're usually a hit and always gone quickly.

You need:
* Cucumber(s) depending on how many you need
* White bread
* A round or decorative round cookie cutter (preferable) or something similar to cut bread
the width of a cucumber.
* Mayo
* Onion (diced)
* Garlic Powder
* Lemon Pepper dried seasoning

-Cucumbers peeled, then run a fork down them long ways, all the way around for texture
and then slice into rounds, not too thin.
-White bread cut into with a round cookie cutter or one with decorative rounded edging.
Can get 3 out of 1 slice.
-Mix mayo, diced onions, dash of garlic powder to taste.
-Place bread down, a dab of mayo mixture on top, then cucumber, and top with a sprinkle of lemon
pepper.
-Transfer onto a decorative plate or travel container. Refrigerate until ready to use. Can be
made up to two days ahead of time.

Nacho cheese!!!!!!!

Veggie lasagna. I absolutely love veggie lasagna. I wonder about eggplant Parmesan? I have not done that for a while and it is always a good dish.

So many choices.

Is dairy okay? Sorry, I'm not a vegetarian. Whenever we have a party, I make a 7 layer dip, it's a HUGE hit, I serve it with those scoop chips. Might not be the most unusual thing, but it's very yummy.
