Chicken breast made with bacon and butter and garlic, probably some sliced pears in juice on the side and Boston cream pie for desert (for those Not on the Atkins diet, lucky people)

I'll probably have some sort of pasta and chicken for dinner.

I just ate lunch though:

"Grilled cheese" made in a toaster oven on wheat bread w/Muenster cheese and smoked deli turkey. It was delicious!!

Going to my stepdaughter's school concert tonight so we'll just grab take aways on the way home. Probably burger and chips though I feel like pizza.

Tonight I'm making baby back ribs with fresh mashed potatoes and corn, and then I'll go to work while the rest of the family gets to enjoy dinner.

3 cups of rice cooked in beef broth, juice from a can of chopped tomatoes, and a table spoon of tex mex seasoning. Next, in a large pot, I cooked mushrooms, chopped onion, the large can of diced tomatoes, 1 cup corn kernels, finely chopped spinach, and a can of kidney beans, topped with a tbs of cilantro. Added the 3 cups of rice to the veggies and beans and stirred, then warmed.

Holy Cow that sounds good!!! It's something that noone else in my family will touch, but I'm so gonna try that. And I have almost everything for it too.
