Wow, there is a whole world of normal eating people out there.

Ugh, I got the last of the corn on the cob a few weeks ago. Cooked it in the microwave & put it in zip lock bags in the refrig.

I just took out 2 ears, heated them....butter & spread a cilantro sause of mayo & sour cream.....sprinkled it with cotija cheese......paremsan works the same. Warmed some left over beans & potatoes I added sorgum to.......not always vegitarian......but was doing good to make anything that's real food these days. Too lazy to cook.

Everything everyone's eating sounds so good....then I think about the work to cook it......I end up not eating much of anything than what I can easily throw together in a couple of minutes.

Two chicken breasts cuts into small cubes, baked with rotini pasta, chopped onion, chopped mushrooms, finely chopped spinach, grated cheese of your choice (I like the mozza cheddar mix packs),about a tablespoon of cooking oil, and a few shakes of pepper and oregano. Baked in oven at 375 for 30 minutes. Pasta is boiled to desired consistency before baking.

I keep remembering my Dad's chili-- i miss it-- that was one thing he used to make that I loved but yet he never made that with me.. he made his omelets and pancakes with me (which this weekend I did both lol) but the chili... sigh.. how to thicken it up.. but that is what is for dinner tonight and probably tomorrow too

May I suggest a can of tomato paste to thicken it up.

Baked potato topped with creamy chicken, peppers and mushrooms. Topped again with a slice of bacon and then some cheese.
