Happy Passover to those who celebrate, I know there aren’t that many of us here.

It’s great that Pesach and Easter are at the same time this year. Sadly people can’t get with families and can’t always get the food needed but everyone is together in spirit.

We can’t go no where or have no one over, we have complete shelter in place. But I am making few dishes and we correspond with family digitally. I made “matzos brei” for breakfast, that’s traditional Passover breakfast food. And I am making matzo ball soup later

I had matzo ball soup earlier this week. It was delicious! It had a chicken leg in it! It was a kosher MRE i got on amazon on a variety pack.

Oh really? Who makes them? It has actual leg? Tell me the brand would you?

I intend (well am I actually going to do it is a question) to make it entirely from scratch starting from grinding matzos into matzo meal (flour). I normally buy a mix. We have few Jewish delis by us and I can get a carry out but I try to avoid it now.

I checked and amazon is out and no one else sells their product. I think it sold out because of covid. It does look good!

I ended up making matzo ball soup tonight and put together partially correct Ceder plate. Ha

I am going to keep my eye on their products. Sounds like a good stuff

I am post Seder cooking and cleaning spent. I made eggplant salad (pot le gel), matzo ball chicken soup, brisket with potatoes and carrots, chopped apples with honey and cinnamon (for the Seder plate), Passover cake, baked sweet potatoes.

There are things I do like instead of just putting a lamb shank on the seder plate, I made a lamb shoulder and for the first time I made these, because the brisket was small- an appetizer of lamb patties that came out delicious.

We’ve been using Zoom and a few of my family members joined us while we did the fastest Seder ever. It was cute to have the family, who are normally never here in person. Also, my son’s gf came over after they were in their own houses for the past two weeks and missed each other a lot. My other son came here from where he is in school two weeks ago.

Feeling very blessed for the love and the abundance of food, we will keep eating all week.

I make matzo Brie, too. We will not be losing weight this week.

My grandpa used to make gefilte fish from
Scratch. It was the best I ever had. He was an excellent cook

My great aunt did, too. I think it was whitefish and pike. It was really good. My non Jewish friend said the getilte fish from a jar I once served her “tastes like azz” lol.

Who likes stuffed cabbage? I made that last night. It came out really good, except my teenager freaked out from the raisins and wouldn’t eat the cabbage.

Tonight, all the food I have left is ground turkey, already baked sweet potatoes and green peppers. We’re trying to hold out as long as we can to not venture into the grocery store. So I’ll have to get creative with the food.

I was thinking about making stuffed peppers with the turkey meat, but everyone will hate that. Not sure what to make tonight. Maybe we’ll pretend we’re Sephardic and use rice to stretch the pound of turkey.

I make stuffed cabbage. But I can’t really say I love it. It doesn’t come out right with turkey meat but I avoid red meat, it just seems to greasy for me.

Gefilte fish in a jar is gross, my dad likes it though

It’s been years since I made stuffed pepper. It’s ok but I can live without it. My tastes changed over the years

I am not Sephardic but I stretch ground meat with rice any time! In stuffed cabbage etc

It was turkey balls with jasmine rice and curry sauce with the vegetables cut up into the sauce, and it was a hit.

The Passover cake mixes are really good, too. We made a brownie one tonight.

The amount of cooking, three meals a day, I am doing is exhausting. I have only short, thin nails left.

Now we have to go to the grocery store tomorrow. Maybe we’ll just finish off the odd foods we have in the house.

While, obviously, I’m sorry there is a worldwide pandemic and people are dying, I have to say that this was the nicest Passover for us ever. My immediate family (one son short) were all together the whole week, we were able to get all the food we needed and it was all very good, and no one else (like my mom) ruined the holiday for us with control issues. This was the first holiday like that we’ve ever had. We had peace in our hearts despite the fears about the world outside. I don’t know what’s coming next, but I really did appreciate this week and am very grateful.
