I'm supposed to stick to a low-fat diet for gallbladder issues and I'm doing some meal planning. I went through my cabinets and found a can of chicken corn chowder. It has 7g of fat per serving (1 cup/248g), none of them are trans fat so that's good, but 1.5 of them are saturated.
One can supposedly has 2.11 servings, but I'd probably split it into three sittings over days. So I'd be getting approx. 5g of fat if I did it evenly. It says the main ingredients are chicken broth, corn, white chicken meat, potatoes, celery, and onion, and contains less than 2% of soybean oil, modified food starch, sugar, smoked bacon, water, corn flour, soy protein concentrate, cream, sodium phosphate, butter, (spices and flavoring) Should I just give the can to someone else? It looks so good but I don't want to upset my stomach again. I had yogurt last night which had 4g fat and that didn't cause issues. (If anyone has other really good ideas for CHEAP EASY meals that my insides won't pitch a fit about, throw 'em at me)

I make chicken fajitas a lot. I buy chicken tenders, around 1 lb. (mch cheaper than chicken breasts), cut them with scissors to bite sized pieces, then slice red bell peppers, green bell pepper, and an onion. I saute the veggies in olive oil, set them aside, use the same pot, saute the chicken in olive oil; once the chicken is done, I add fajita seasoning (I buy a pouch that is good for 1 serving) and around 1/4 cup of water then serve on wheat tortillas. I don't know how much fat is in that, but I doubt that much. If the tortillas have too much fat, you can always eat the veg and chicken alone.

I just want to know if I should give this can of chowder I already have to someone else or not.
But thanks for the chicken fajita recipe. (Sorry I forgot I asked for other recommendations and thought that was totally off the mark haha whoops my bad)

Well, you can effectively reduce the amount of fat by adding a potato or some veg to it.
I think i eat a low fat diet, but i do eat regular, altho strictly measured, salad dressing and real mayo, and the weight watchers app shows me at about 50 gm fat per day. So divide that by 3 or 4 meals and as long as you are under that, i would say your okay. I remember our secretary in the 80's saying on her diet she was having 10 gm fat per day. That is pretty insane i think. Your body will let you know, altho i understand you dont want to wait for that. liverdisease guy on youtube just yesterday posted on what to eat for cirrhosis and pancreatitis. He was like, "no cheeseburgers, fries, wings, pizza - all the good stuff"! And that he could not face another plate of steamed broccoli and chicken breast. He is in a sad situation. Having tiny fridge space makes me more aware of my fresh food purchases. For pantry, i buy grains (minute maid rice, grits, oatmeal, quinoa), pouched chicken and fish and veg, tiny cans of kimchee, canned beans, canned potatoes, and steri-pack extra firm tofu, that i just add to stuff. Tasty-bite is a pretty good indian food source, i use that over rice and or tofu. |

I decided to give it a shot on Sunday for lunch. If I skip a meal it’s usually lunch so if I back down or give up after just a slurp or two it’s not a huge loss.
Tell me more about this steri pack tofu. I’ve never had/used tofu before (I honestly don’t even know where to find it in market basket)

It's like a very bland pudding or yogurt. Less bouncy than egg whites. Do you ever see eggless egg salad or eggless scrambled eggs? Thats usually chunked up tofu. It seems like it doesnt overwhelm my stomach, but it satisfies my hunger. Its like a perfect food.
I get it on amazon. At whole foods i think ive seen it by the refrigerated tofu, but it could be on a regular shelf as well. Maybe in an asian section? It has to be refrigerated after opening though. I just eat it plain out of the box, with veg and salad dresssing, or a tasti-bite beans and sauce. |
