Does anyone who struggles with binge eating see food and automatically "think" you are hungry? Your stomach is not hungry but your mind is starving. Am I alone in this behavior? It's like the stomach and the mind are disconnected. I hate this confusion.

I experienced this constant hunger before. For me it was dealing with feelings, try to keep them down with food. Funny after I dealt with those feelings, bingeing lost its appeal.
Also eating higher protein foods and less carbs caused less overeating.

I have times, when I am in bed, and will think about the cookies (buns, etc, etc) in the kitchen and cannot sleep until I eat them I am not hungry, but my brain says "go get it"

Yea, it's like the minute your brain thinks of something; you can't let it rest until the problem is dealt with (food). |

I do this too. I get up in the middle of the night and go eat.

That's what my psychiatrist does too. I mean logically everyone has will power. Accept when one struggles with an addiction; the addiction takes over.
