tomatillo sauce

2 lbs husked tomatillos
4 green chilies, 6" long (roasted and sliced, or you can use canned)
1 cup chopped onions
1/2 cup chopped cilantro
1/2 teaspoon salt
2 tablespoons oil

Put tomatillos in pot with 1 cup water. Bring to boil, reduce heat, cover and simmer 10 minutes until tender, remove. Retain liquid. Remove stem and stem base from tomatillos. Put retained liquid, prepared chilies, tomatillos, and rest of ingredients in blender and mix until smooth. Best served warm over chicken enchiladas.

Thanks, Art. I made gorditas the other day and we had them with shredded chicken with lime and cilantro and salsa. This sounds like it would be good to add!

I started making the gorditas because I was so sick of messing with the gluten free flours. Everything turns into this sticky gelatinous mess. I was finally at the 'screw it' point and just switched to masa.

I used to work on a 1800 's living history farm where we plowed with oxen and grew all kinds of crops. We grew tomatillos( not so sure they are historically accurate but they sold well at our farm market so..) we used to make the most amazing salsa with tomatillos right from the field, garlic, lime juice, cumin, salt and some avocado ( after hours obviously)
It was always amazing.
Doesn't taste the same with store tomatillos.
I've also never again had watermelon or corn as good as the stuff we grew. We used to eat raw sweet corn and watermelon for an afternoon summer snack...ggood memories

Art, I loved it. Some of the most beautiful nights of my life were spent sitting in the barn listening to the horses , oxen and sheep eat their dinner, all the work done ( that might be part of the nostalgia--owning my own business means the work is NEVER all done), not a sound to be heard except crickets , frogs and critters. I'd sit in the hay loft and read for hours....

And we would drive the oxen through the river on the way to the fields and jump up on the top of the Wagon like Ben Hur with the oxen running.

My coworker was a TV nut so we would sign the theme songs of 80 s TV shows while we hoed the corn.

I got a tractor with a big mower attached jack knifed on a huge hill ( after hours we'd maintain the grounds with motor equipment because we were open to the public and the horses and oxen couldn't keep up with plowing and haying and such PLUS keep the grounds manicured. I TOLD my boss that I don't generally do well with anything that doesn't have a heart beat but he ignored me. We used four giant Amish Draft horses to rescue the tractor . It was SO cool!!!

However cutting hay with a scythe is something I never need to do again. And my boss was kind of a jerk . He didn't think women belonged on a farm so he had the mill switch from putting putting our grain in 50 lb bags to putting it in 100 lb bags to prove I couldn't do the job. He forgot about levers and wheelbarrows. .....

Evening couch. Been a few days since I checked in. Busy, busy, busy. Got asked to stay an hour late at CVS on Thursday. It was (delivery) truck night and we had a lot to put away as the truck arrived late. Then I got asked when I worked last night (Friday) if I could work today (Saturday). I'll take the extra hours. More hours = more income. After today I have 38 hours for the week. Not bad.

I am so ready for this school year to be over. The "bad" kid who only listens to goth music and says songs suck unless they curse and talk about killing kept putting his headphones on the ears of the down-syndrome student whose parents are only allow him to listen to Christian music. I have to tell the kid doing this to stop. I mean I have to respect the parents' wishes of the down-syndrome kid. The goth kid tell me to "f**k off because he is trying to show the other kid it is cool music". Grrrrr... I have nothing against people who choose to like goth music. I don't care for it, but to refuse to stop sharing it with another student who is not allowed to hear it is a little too much for me. No boundaries at all...thinks he can do whatever he wants. And will tell me and the teacher that I assist that he doesn't have to do what we say because we have no power over him and that if we take away priveleges for not doing what we say his mom will sue the school. His mom probably would too as this is his 3rd school this school year and the other two schools he attended do have lawsuits pending against them for restraining the kid when he swung a punch at another student. 5 more school days. 3 day weekend to rest up for the terror-child on Tuesday.

Have T on Tuesday. Will be the 2nd session with the new T. I am considering it my first "real" session, as my first session was just a getting to know what I was working on with my retired T and a little of my history.

Then have pdoc on Wednesday. Still trying to decide if I want to ask to go back on oral antipsychotics or not. I am getting tired of monthly visits, due to a monthly injection. I fear that even if I do ask, he will not agree to it because I didn't/don't always remember to take my oral meds and my psychotic symptoms have been pretty stablized since going on injections. My mood symptoms are still up and down and all over the place, but I sometimes forget to take those meds. I guess I could discuss my thoughts on it with T the day before, so I feel more comfortable addressing the topic with pdoc the next day.

No holiday plans for this weekend, have to work on Monday. A "nice" 11-hour shift at CVS. I don't mind working the holiday, I had nothing else planned, so why not.

Need to do laundry and clean my room tomorrow. Half my bed is covered with bags of non-perishables and clean clothes to put away. Good thing I have a queen bed here, so half still gives me sleeping room. I'm used to a twin bed anyways, so the queen these past few months has been nice.

Well, I think I have rambled enough. I need to go to bed, so I can get up early tomorrow to do laundry and organize/clean my room. Night, couch.

BayBrony you got me reminiscing about a couple summers I spent working at the North Rim of the Grand Canyon many years ago. They had employee rooms in the bottom floor of the hotel, and the "old" cabins in one area were also employee housing. I LOVED IT! I worked in housekeeping so we cleaned guest cabins during the day, and then we had different days off every week and all of our evenings/nights were our own. So we'd hike down in the canyon, or hang out in each others rooms listening to music and talking, yeah there were a lot of parties too, it was the BEST summer job I ever had during college. I remember starting just about every morning sitting out on the veranda of the lodge watching the sunrise over the canyon. Beautiful! Ever since then I wanted to come back to Arizona... and I finally made it about 6 yrs ago. I'm not living anywhere else again!!

Art I have never been to the Grand Canyon. That sounds amazing! When I worked at Colorado State we were going to take a long weekend to go to the grand canyon but we literally would have had enough time to get there, see it and turn around. So we went backpacking in Canyon lands NP instead

Did you ride the mules ???

I have been to the Grand Canyon twice. Both times, it was full of fog, so we could not see anything except what appeared to be an ocean of fog with an occasional island popping up. It was very disappointing.

It really needs to stop raining. Our lake is about to go over the dam here, and the water keeps coming. Driving to and from downtown Dallas tonight was treacherous at best. The rain made driving really difficult; lights on the highway were out just to make it that much more of a challenge. Further south, my cousin is at this very minute evacuating from her home because the river is rising and her home will soon be flooded. Whoever is praying for rain can stop now.

Nope, never rode the mules... I did hike all the way to the bottom though once, and slept on the ground next to the river for one beautiful night... then hiked back out the next day. Mostly we just hiked as far down as Roaring Springs and hung out there! I haven't been back to the North Rim since I worked there, but I did visit the South Rim a year or so ago. I like the North Rim the best!!

Sometimes a poster comes on to PC with a story that gives me the distinct impression they are just yanking people's chains . . . particularly if they are brand new and don't return. I've learned to just sit back and wait to see if they return and find out a bit more about what seems to make them tick. Happens on many different forums, not just this one. People are so quick to swallow the bait; hook, line and sinker.

They loaded everything possible in trailers and hauled it out, including removing the lower kitchen cabinets. This is apparently the worst flooding to hit since 1929. They were flooded very badly about 15 years ago and had to pretty much rebuild the entire bottom floor of their house, but this looks like it will be even worse. It is looking really bad in the central Texas area.

Tornado warning here now. I expect the tornado sirens to go off any time now. Not going to sleep tonight I'm guessing.

I grew up in a house that flooded pretty regularly. We had a whole system for getting furniture up and out of the way, etc. Another memory of being caught in a flood on the way to my grandparents and seeing cars floating and disappearing into ditches. Needless to say, I DON'T like floods and severe weather. My sister and I are both up and wide awake with worry over our cousin's situation right now, and we're about as far apart in Texas as you can get. We're talking via Facebook.

My cousin posted pictures of her kitchen. They emptied out that house in less than an hour. Hopefully it was all for naught, but if they do flood, at least they will have saved some of it.

Morning raccoon story.
I got up this morning, got a drink from the fridge, and then decided to take the dogs out back and let them exercise while I did some yoga and meditation. Forgot to put the chain back on the fridge/freezer.
In the hour I was outside the raccoon consumed most of a half gallon of ice cream, an entire package of frozen veggie burgers and some frozen paratha. The dogs were happy because they cleaned up the remains. I was not so happy because I have to tell my partner that the crappet ate her ice cream. It is not at all true because my food gets eaten all the time ( I'm a mostly vegetarian Eater with WAY different food tastes than my partner so there is a lot of food that is " her" food or " my" food) but my partner believes a conspiracy exists where the raccoon eats ONLY her food and almost always something she got as a special treat. Indeed this morning she was planning a post birthday breakfast of strawberry shortcake with ice cream....and the ice cream is all in the coon's big Buddha belly

Eta: it's not clear to me how that animal can even walk right now but she is trying to bully the yellow lab into giving her his dog food too
