I got a pork roast with sauerkraut in the crock and with that mash taters and ... well not sure what to have for dessert lol.

This is gonna make some of you gag but we are having Spam and corn on the cob. I love Spam!! We were gonna have taco salads but mom got corn at the store and so we are gonna have a favorite quick supper of Spam.

Aah! We call it bully beef! (or corned beef) My husband absolutely loves it!!

Tonight we had home-made oak smoked haddock and salad burgers.

Being Saturday, we will most likely indulge in take-out (unless we get invited out to a barbeque, which normally happens at the last minute). Take-out will most likely be chinese food!

Spam is good fried crisp like bacon.

Spam was created back during WWII so the troops could have meat. It is canned ham, basically.

I had a foster daughter from Veitnam that thought it was a delicasy. She would go on trips to New York and bring back all these ethnic foods and cans of spam. I laughed at her because it is not a fancy food here.

Spam comes in handy when camping too.

Lastnight, we had a traditional Newfoundland dinner called "Jigg's Dinner"

It is a huge pot boiled over an open fire and had within it potatoes, carrots, turnip, cabbage, peas pudding, bread pudding, and salt beef. From the oven came a huge turkey with stuffing. For desserts, there were, fresh cut fruit, trifle, biscotti with chocolate chips and cherries in it, date squares, apple pie, and cookies.

The event is called a boil up.

Well, then your spam is not my corned beef (or bully beef) after all. We do get a tinned ham but it is rather processed - I suppose it must be similar to that. Never imagined frying it!

Ingridave - your meal sounds awesome! Yesterday, hubby made a potjie (pronounced poy-kie) which is also a meal, done on the coals, in a big cauldron. Very South African!!

Tonight we scaled down and I made a humble but delicious shepard's pie (which we call cottage pie).

Tonight we had hamburgers per kids request. Usually I use those ready made burgers that come frozen in a box....the kids don't care. but this time I made my own adding onion soup mix and worchester sauce to the meat. Of course they had to have cheese burgers and I sauteed some mushrooms for mine the kids don't like mushrooms. The less there is for them the more there is for me! What's for Dinner?
also had french fries, which I won't eat. and grapes, which everyone eats like they are ravenouse wolves!

Tonight I made spaghetti (flat spaghetti) and meatballs in my own tomato, basil and garlic sauce - served with a green salad. (Wish I had some fresh parmesan to go with that!)

Sabrina: The potjie sounds like a fun and tasty event. Last night, my mom prepared a roast beef dinner with potatoes, peas, carrots and of course, the roast beef, as well as a rice and peppers dish and I did a salmon fillet dish in white wine with red onions and a sweet honey mustard dill sauce.

Today, I am on a simply soup diet with leftovers from the previous dinner in it.

I love the sound of the rice and peppers dish ... which kind of peppers? Do you have a recipe that you wouldn't mind posting?

Last night I attempted something completely different - I made a chicken & mushroom potato and zucchini bake. It didn't turn out quite like I had hoped but it was well received and tasty. (Believe it or not - I seldom eat what I cook, though I do taste).

Tonight, as we are heading off at 5am tomorrow for a weekend away (I didn't want dishes and leftovers) was a good and trusty standby - take-out pizza!
