tonight we had parmasan encrusted baked fish a tossed salad and roast corn.

Sabrina: The rice dish had 1/2 cup of brown rice, 1 cup of water, with mushroom seasoning boiled for 20 minutes. On another element, take finely chopped sweet peppers (I like to mix the coloured sweet peppers) about three tablespoons, two finely chopped mushrooms and half of a medium onion finely chopped, and stir until softened in one tablespoon of olive or canola oil. When vegetables are softened, add them to the rice pot and leave to cook until rice is completed. Serve with favourite main course as a side dish or combine with beans to make a full vegetarian dish.

Tonight is enchiladas and tomatoes. Its my birthday dinner and I made enchiladas. My friend Rex is coming over to my parents house and will enjoy it with us.

Thanks for the recipe Ingrid - definitely going to try this out.

I spent the weekend around a camp fire and cooking our food over the hot coals - it was so much fun.

Tonight I am going to make a chicken casserole with a vegie stirfry

Tonight, We will have leftovers from the beef stir-fry we made yesterday. I will have a salmon gumbo soup I made a couple of days ago. Yummy leftovers.

Even though that was a few days ago - sounds yummy indeed.

Tonight I made a curry mince (ground beef) and vegetable "stew" with yellow basmati rice and a green salad.

Tonight we had boneless chicken breasts that had been marinanted in honey mustard. Mashed potatoes and corn.
I guess I mean last night...tonight I think I will heat up a ready made lasagne I bought from the store. It's good, the kids like it, and since I work tonight and tomorrow night I can just get up and heat it for the right time and have no pots or pans to wash.

I sinned (dietary). I am supposed to stick with low-fat fish and only chicken breast or beans and nuts. Yesterday, I made two hamburgers for myself.

Hate it when that happens. I seemed to be sinning a whole lot this week.

I made a potato, mushroom and cheese tart last night (with cottage cheese and cream) and had a helping. That is supposed to be a no no but I just couldn't resist. Hubby barbequed some chicken kebabs too. At least I had all my salad!

Friday nights are usually very relaxed. Not sure what we're having. Hoping it will be pizza What's for Dinner? but then I will have to work extra extra hard at the gym next week! What's for Dinner?

Rice and wild grains with herbs, a potaoe cassarole, Po's outta my garden and the onions.
In the cassarole, is potatoes, onions, garlic, little flour, little provalone chesse, salt pepper and half and half.
Also, a nice rib eye, cooked medium, but hot and fast!
Dinner will be late tonight, oh well.........was at the Dr's office, getting meds so I can get along well with others.....
LOL!

MMMM MMmm!!!!
Left overs from last nights enchiladas! .
I just made a big bowl of home made pop corn with real butter......off to the TV!!!!
(BIG glass of ice tea!)

Favorite meal of all time would be some kind of lobster dinner. Or scallops. Too bad you don't get to eat those very often. Unless you get very lucky. What's for Dinner?

What I had for dinner tonight was a pork chop, marinated, but I don't know what in particular he used, with green beans and rice.
