My bean and roasted veggie salad was pretty good - but I felt it needed more veggies and less beans...(Not a huge bean fan to begin with, but I need the protein)...

...So, I'm roasting up some more peppers, onions and added asparagus to add to it. I'm looking forward to seeing how it turns out!

I remember the last time I drank too much - which was at that holiday party I went to - December 8th, actually.....And I haven't had a drink since. LOL

It's the same guy. We met online so I could get to know him over email first. We live about an hour away from each other. I am more of a one guy at a time type girl when it comes to dating. There is no way I would be doing this if I didn't have the support of my t. She's been awesome about this.

Granite - hope you are feeling better soon also. Hangovers are not fun. Gave myself a wine hangover a few weeks ago after the rough t session... don't have any urge to drink wine anymore.

Morning all. Quinoa is still kicking my ***. LOL. Cannot make it right to save my life. My sister is law is in town (the sister in law I adore), and she's going to show me how to make it today. We're doing Passover dinner tonight instead of tomorrow because of our son's work schedule. All in all, it's a good thing no one is super orthodox (especially as the two people cooking are goys, LOL). Anyway, yesterday was fun -- shopping and cooking with my sister in law and my daughter. Homemade veggie stock is ready for the matzo ball soup. The dessert is mostly done and the veggies are chopped for the rest of the meal. Oh, and we have slices of radish soaking in vinegar because my mother in law likes radish roses. She always had "the help" make them before, but now she's stuck with SIL and me trying to figure out the heck you do that. All in all, I'm really looking forward to the rest of the day and the week while they are in town.

Hope everyone feels better quickly! Way to set a good example, Wikid! Have a great Sunday, Everyone!

Hey, MKAC, let us know what you learn about making quinoa! I just bought some for the first time and am hesitant to try to make it after hearing your experience....waiting with baited breath for your feedback! LOL

MKAC - I've never heard of soaking radishes in vinegar. Sounds really interesting.

UGH!!!!! We are getting lake effect snow today. I know I shouldn't complain because they are getting lots of it to the south and we are only getting a little... but I am so done with winter. There's still 10 inches of snow in my yard. Last year I was mowing the lawn and planting stuff at this time...

I hope all the sickies feel better soon. I've sprayed my iPad with Lysol, so I'm hoping I'll be okay.

I actually managed to swim this morning, for the first time in months. My neck and elbow are improved enough that I can do it without excruciating pain. It felt awesome to be back in the water. It's like being lightly massaged all over while you're working out. I can really get into a zen state in the pool.

Believe it or not, I actually know how to make radish roses. Why I know, IDK!

But I've never tried vinegar--just salted water.

You cut a slice off the stem end so it will sit on end. Then, with a sharp little paring knife, start at the stem end and make a series of 2/3 of the way through slices to make petals. Once around the radish, then move higher and repeat. Best to stagger the cuts on each row--like laying bricks. When you reach the top, you'll end up with a tiny square center part. Then soak in the water until they "bloom."

We're driving to my daughter's today-- 4 hours right into the snow! I'm not so scared though; maybe DBT is paying off. Plus, I'm reading The Power of Now.

MKAC: funny you know the word "goy". Enjoy your meal. Our seders go until 2 am usually, both nights. Most of the kids stay up too because they take naps and they don't drink wine!

I'd better go.......

I've made radish roses too, using salted water. I also make carrot or parsnip daisies. I have a little cutter for the daisies. Love me a cool salad.

I slept most of the morning. Just whipped up a coconut milk, papaya, ginger, blackberry smoothie. Feeling better, just really tired and achy.

Where is SD? On the road or something? And Chopin?

Quinoa...the key is rinsing (if it needs it...read the package) well. I always do 2:1 with the water (like rice) but once it starts to open I take the lid off and up the heat to dry it out. You have to watch it closely though. I like to use veggie stock instead of water. Every brand is different though, so I would try several different ones until you find one that works out well for you. I cook 2 cps at a time and cool it on a sheet pan to use in other things. It would work great in your white bean salad for more protein, MUE.

I love quinoa SO MUCH!!! The peoples food coop here makes a quinoa salad with spinach, parm cheese, sunflower seeds, garlic, and lemon and olive oil that is SO GOOD!! I get it at least once a week. I wish I were a better cook. I did make awesome scrambled fake eggs this morning tho. Very fluffy. I was proud of myself. I would compare them to any cardiac unit's!!

I wish some of that heat could come up north. My parents just got 6-7 inches of snow where they live and I'm not looking forward to going out in windy 29 degree whether (22 degree windchill) especially since it's just going to get colder when the sun goes down. I mean, it's spring, can we have at least 40-50 degree weather already?
