Idk if quitting is even an option, it might be mandatory for my pnurse to refill my meds.

This is really more of a rant paragraph that you don't need to know unless you want to know why I'm not seeing her anymore. It's not really triggering but it's useless so I'll hide it.
Possible trigger:

I have to stick with this CMHC because it's the only one in the area. The other two therapists I had at this place sucked as well so I assume every therapist that works there is dangerously incompetent. I could ask to do once a month appointments just so my pnurse can do my meds too. I'm good at mostly blocking out what T says unless I want to show her everything she says backfires (like the yogurt thing, yeah, I'll eat yogurt 3x a day for my meals for a total of 240 calories a day. That's a diet I can agree to).

Idk what to do man, I don't even know who to ask to switch (other than her) and I really don't want to talk to this one anymore. I just can't. My plan is to just not show up to therapy until someone says something. Good plan?

I think it's at least worth trying someone else there, if there's someone else beyond who you've tried. Or at least cancel with this one rather than just not showing up (I suspect they could still bill you for a no-show).

I don't have another appointment scheduled so there's nothing to cancel really. It's just a matter of "will my pnurse see me if I'm not in therapy?" I guess she (pnurse) will ask about the lack of appointments/notes from t and I'll say I don't like therapy with her and if I need to do therapy I'd like someone else. There's gotta be one competent therapist in that building, right?

Ah, OK, then no need to cancel. Makes sense just to see if pnurse asks then.

Yeah, talk with your pnurse. Hopefully she'll be helpful. That therapist sounds like a dud.

Rather than saying you don't like therapy with that person, I would say it is not a good fit or therapy with that T is not helpful.

Some (the nurse?) might interpret 'like' as you being difficult or being swayed by your subjective perception. It is not about liking, that T is not doing her job well. In other words, your therapist is, from an objective standard, crap.

So, if you cannot (up to you to judge how it would go down) tell the nurse this, I would suggest wording it in a more objective way instead of 'I didn't like therapy with X'

This T scsres me T least out of her league on the mentioned issues. I am especially frustrated by her advice on hiking. I have hiked a lot in Maine and know many experienced hikers in that area. They would never go hiking on mountains they know well without proper planning.

She doesn’t sound very bright. That’s for sure. It’s almost entertaining how dumb she is. I’d either ask for a different one or see this one once a month, nod and ignore

Patients have rights. You can communicate with your pnurse about your request for a referral to a different therapist, one who has more experience with eating disorders and other symptoms you're experience. I agree with Rive: rephrase this to state that your t is not a good fit.

If, however, you feel that the pnurse and the t are not good matches for what you need, try to find a different facility or look into a different insurance plan (if you have an open enrollment type thing around this time of year), and then see about a different option. Some facilities are better than others. You're not limited to your pnurse's demands or rules; you are free to select a different provider for both. You can select a new therapist and keep your pnurse, and you can also revoke your consent between your pnurse and your therapist, which will alleviate this issue with what your pnurse thinks of you. That is your right for patient confidentiality, unless there is some mandatory rules about their facility that you need to abide by, in which case, might warrant your need to find a different facility or two different providers altogether.

So, you have options. You are in the land of the free, and you have freedom to choose options within the guidelines of your healthcare insurance company. If you're unhappy with one provider for whatever reason, go with another one. If you don't want to deal with the nuances of being "politically correct" by phrasing things a certain way, then find a therapist separate from a pnurse. Don't authorize consent, as that's your freedom and right to keep your healthcare separate if you want to. Be bold, be brave, and assert your needs. This is your healthcare, your money (for copayments), your time, your life. You find what works best for you.

I would suggest trying someone else at that place. You never know, you might find one of them to be competent even though the ones you have seen so far have not been.
