Anybody have any resources or ideas for quick meals? I have been struggling lately with cooking, and I don't want to eat out because it's expensive.

Eating in is expensive too....everything is expensive right now....i recommend Walmart frozen casseroles as the cheapest option they have everything from a chicken pasta Alfredo to Sheppard’s pie for about $7-8 and its around four servings. You can add bagged salad on the side to really stretch it out and add health.

Potatoes are good, you can do a lot with them. I like to cut them up into pieces then coat with olive oil and season them good, then bake them, when they're done I like to dip them in ketchup. They taste really good that way. Or you could make potato pancakes which are good too. Or just a classic baked potato with whatever toppings you want. I know that's not really complete meals but potatoes are pretty filling

I might have to try that out too, maybe next time I shop I'll go to Walmart instead of the other grocery store I typically go to

Walmart is a solid dollar per item less than other groceries around here....

Thanks for the tips! I've been making pasta at home a lot. It's not all that nutritious but oh well. Yeah, food is expensive.

This is what I'm making tomorrow, I've made it before and it was good. This time I'm using hamburger buns instead of hoagie rolls and am going to put some lettuce on it too

I have never personally made chicken thighs by myself before. I bought a pack recently. They're in my freezer. I'm going to thaw them and make them this week using sweet baby Ray's BBQ sauce and following this recipe I have screen shots of. I love BBQ chicken thighs. They're so good. I'm excited to try making them myself.

I like to identify myself as a bargain hunter / gatherer. I like to peddle my bike around to the different stores looking for items that are approaching their expiration date or dented cans which are usually half price. Money saved is money earned. Recently I found this big can of chili beans that had a dent in it. I also found these flour tortillas half priced. I added some rice and a couple of other things and have been eating burritos for dinner every night for the last 2 weeks.

I have two crockpot recipes planned for September, this one, which is an asian inspired pepper steak one, served over rice (I'll probably swap out the white rice for brown rice). I'll have to stop by the butcher in the grocery store to get some thinly cut trimmed strips of serloin steak
