Shaved vegetable tart
This is a surprisingly good and easy vegetarian entree. You can make it easier by getting a prebaked crust that just requires heating like boboli. And if you want to lessen the chopping slightly chive cream cheese will work in a pinch.

Ok so this is an easy cheat recipe but it’s good and fast. I like meatball subs....but I use frozen meatballs. So you need a bag of frozen meatballs and microwave 4 of them per package directions. Then toast a hotdog bun or use it plain with the four meatballs. Add a broken in half slice of provolone to the bun and microwave until it melts usually 8-10 seconds. Add some jarred marinara sauce, whatever variety you like and enjoy!

Grilled Chickedn With Red Peppers and Basil, Martha Stewart
Thsi is really a terrific summer dish with the bright colors, sweet corn and peppers, and yummy basil. Highly recommendded and pretty easy and fairly cheap. 3 tablespoons fresh lemon juice 4 teaspoons fresh balsamic vinegar 2 tablespoons extra virgin olive oil 6 tabelspoons chicken stock 1 garlic clove minced 1 1/2 pound trimmed boneless chicken breasts, but if you like dark meat, no problemo 2 red bell peppers, or one red, one orange is fun, too salt and pepper 8 big basil leaves 1 thinly sliced shallot Four ears corn Directions In a shallow dish, whisk together oil, stock, lemon juice, vinegar, garlic. Add chicke, turning a few times to coat for maybe 20 minutes. I like to have more marinade to pour over the tope at the end, so I often make a bit more of this. I recommend doing that. Just expand the recipe by a factor of 2, usually. On a stovetop or outdoor grill, grill the peppers, turning until skin is charred. Place in paper bag or on ice, whichever method you like. You can always roast peppers in the oven, too, on 400. I like the paper bag technique. Then, peel skin and slice into 1/4 pieces. Place in bowl, salt and pepper to taste, and add the reserved marinade and coat. Slice corn off the cobs. In a large sautee pan, caramelize the shallots however you normally caramelize. I prefer butter, but olive oil works and is healthier. Once shallots are done, throw in the corn for just a minute. If you cook it too long, it will lose its moisture and shrink up, so, just warm it up is how I do this step. Maybe a minute is all. Remove from burner. Grill the chicken, mayb 4 minutes a side. Slice into maybe 1/3 inch wide strips. In a large serving dish, place corn and shallot mixture across bottom of dish. Add chicken artfully and then, peppers across thetop in a line. Chope basil roughly and sprinkle over top. Pour reserved marinade over the whole thing and serve!!!!!!!!!!

Oh FYI...how do you guys organize recipes? I used to tape them into a notebook but four notebooks later I realized I’d need an index or something so now I use the app called paprika....it’s a pay app but fantastic because it in seconds downloads recipes into an easy to read format that stays open while cooking. No more losing recipes when blogs go under. Anyway just wondering what you do?

Frittata with Asparagus, Goat Cheese, and Herbs | Martha Stewart
This is my fave Martha Stewart recipe aside from cookies 🍪. It’s another frittata but they’re so easy and good. This is one for the spring rotation in my mind but you can usually get asparagus whenever these days.

I don’t have the recipe for the gluten free crust but I’m having pizza for dinner!
I put everything on it. It’s thick from toppings. Pizza sauce, layer of mozzarella cheese, rosemary ham, pepperoni, bacon bits, sun-dried tomatoes, spicy eggplant, pineapple, green pepper, red onion, fresh tomato, homegrown basil, pickled jalapeńos, more mozzarella on top, and finally topped with some feta cheese. ![]() ![]() ![]() |

Possibly my favorite all time recipe....if you haven’t seen the smitten kitchen blog it also happens to be my favorite food blog. You can’t go wrong with her. She also used to be vegetarian so she has a way with veg too.

Just made my strawberries and raspberries for shortcake! Oh so it’s going to be with pound cake and canned whip cream but still fresh berries!
My parents used to have a strawberry patch when I was young....never really needed to add sugar. These ones get a dusting to macerate though and then they’re just like the good old days. If you make fresh cake for this, recommend adding coconut ![]()

easy dump cake peach cobbler
get two big cans of sliced peaches get one box of yellow cake mix one cube of butter cinnamon Spray the bottom of the glass pan one of those 8 by 13 or whatever Put in both cans of peaches but only one can with the juice, drain the other can before putting in the peaches sprinkle the yellow cake mix on top, make it kind of even microwave the butter until it is liquid, pour on top of the cake mix sprinkle cinnamon on top to taste Cook at 350 to 375 for about 45 minutes or until it looks a little brown on the top and edges. That's it. Super easy. Super good.
