10/10 - Yesterday was my 21st wedding anniversary. Normally we would have gone out to eat, but we've been spending a lot of money lately, so I decided to cook. I made pan seared filet mignon steaks with a delicious portabello mushroom wine sauce, topped with fresh chives from my garden. With that I served multi-color boiled fingerling potatoes with parsley, some sundried tomato stuffed green olives, and a nice spring greens salad with fresh strawberry slices, walnuts, goat cheese, and balsamic vinegar /Meyer lemon olive oil drizzles. We also drank some of the wonderful Portuguese wine we bought during our 20th wedding anniversary vacation to Portugal, last year. I was going to roast the potatoes, but for some reason our street lost power between 3 pm and 10:30 pm. Luckily, I have a gas range, so I manually lit the gas burners so I could cook everything on the stove.

9/10 - My husband and I made beef kabobs on the grill yesterday along with grilled veggies (zucchini, red onion, mushrooms, tomatoes, and corn on the cob). The marinade for the beef cubes was good. For the veggies, I simply tossed them in a little olive oil, high quality balsamic vinegar, and oregano, basil, salt/pepper. Luckily my husband grilled them perfectly. Usually he burns them. I made my favorite homemade rice pilaf to go with it.

We have leftovers of the above to eat tonight. Yum!

8/10 - My husband went out with friends, so I made myself a shrimp with broccoli stir fry. It was good! He won't eat broccoli and is not fond of stir fries. It was a treat.
