yea...

so how's everyone else fairing up? We are still LOOKING for a home! The "swingers house" just had too many dangling chads. So...we are off to see several places this afternoon. I asked H if it would be warm enough to pitch a tent when we close on ours. We have really pushed the closing off as far as we can.

that's right Wiki...you are doing what is "right"...

thats what I love about you...your sense of "justice"... "rightness"... you have a way of seeing that in situations that could otherwise be clouded by other emotions for other people...
Thanks for this!

The good thing is it is getting to be the time of year around here where seasonal rentals are easy to find, so we can rent a furnished place for a month if need be.

I'm sure the house hunting under a deadline is stressful... I hope you find something comfortable soon even if its a rental...

ETA: didn't see your last post...that's great!

I'm considering going back to my old eating plan... ( I quit it cause it got boring) but I don't know how to cook and it called for all these healthy things I never heard of..

so when I find the paper would you all give me suggestions and directions... the only carbs are organic brown rice...which I do already... and quino..something or another and couscous (I think) ... I dont' even know what either of those things are...
luckily the other think was Kashi rice pilaf which I think comes in abox..

You can get Couscous in a box too. I'd be interested in seeing the eating plan... I need one

Sure Ready...I can help. Quinoa is a grain (like rice only tiny) that is high in protein. You may want to try black rice too...it's really good. And then there is millet (also a grain) that is more like mashed potatoes.

You really need to plan your week ahead of time, so you're not looking for something at the last minute. And get your family eating that way too so you aren't cooking two meals.

I actually have a very fattening BEEF stew on the stove right now. H brought home some grass fed beef from the green grocer, and he's been doing so well on his diet that I decided to make him something old school. Smells so good, carrots and parsnips and red-skinned potatoes. I'll throw on some buttermilk biscuits too. Totally fattening artery-hardening crap, but they'll gobble it up. I have no idea what I'll have though.

okay... I've accepted the brown organic rice... sometimes I eat it plain but mostly I turn it into "spanish" rice by frying some onions and peppers and adding... diced tomatoes (from a can) and then mixing in the rice...

does couscous or quinoa have any taste in and of itself...how can I make it have flavor... I get very little fats to use so butter is out...

You can always cook it in veggie stock (home made or boxed). You can also cook a ton of it ahead of time and cool it off on a cookie sheet before putting in the fridge. Then it can be sauted with olive oil and garlic. You can't go wrong with fresh herbs either.

Hey granite...thank you.

They think that I "always have to be the hero" or even call me "susie do-gooder". Grrrr. I am not trying to be anything, I just care.

oh...and Quinoa can be used on salads cold, as a protein too. I make a brown rice salad thing with pineapple, sauted onions, garlic and chives....mix it all up and drizzle your own dressing over it.

Dressing: 1/2 cp flax oil, 1/8 cp lemon juice, 1/8 cp apple cider vinegar, sea salt, pepper, coriander, fresh thyme, and a tsp agave nectar, a few raw cashews and whip it in the blender.

Ready, your post reminds me of a discussion I had with my son. He has steadfastly refused to learn to cook. However, his girlfriend's family has a "game night" and whoever loses at whatever game they pick has to fix dinner. He had the misfortune to lose, but his girlfriend said she would help him. So his girlfriend has shown him some things about cooking. I was trying to make a "cake ball" recipe he and his girlfriend had done and asked him a couple of questions about which recipe did they use, how much cream cheese, etc. Finally, he turned to me and said, "MOM, you're asking cooking questions from a person whose only cooking expertise involves TOAST." We both cracked up then.
Thanks for this!

About to leave work for T. Think I might have a freakout in session today. My stomach is upset and my hands are shaking a bit.
