Well, don’t go gf if you’re going to be tested. It’ll throw the results off.

As for your daughter, I’ve read autistic childrens’ tests often show markers of gluten sensitivity, higher at least compared to non-autistic siblings’. There seems to be a link between the two conditions, maybe direct, maybe not.

Hail seitan!

Tempeh sounds weird in concept, fermented soybeans, but it's mild and a little nutty. Nothing like natto (which I didn't care for) which is also fermented soybeans. So good sauteed until its edges are getting crispy with a little salt. Yumm.

Yeah, bacon tempeh isnt BACON, but it's pretty darn good. Like you say, its got the crisp, its got the chew, its got the salt - pretty much everything but the squeal.
