Bavarian Pineapple Cream

1 cup pinapple juice
1/4 tsp. salt
1 cup whipping cream
1 cup crushed pineapple
2 tsp cold water
1 tsp lemon juice
1 envelope gelatin
1/2 cup sugar

Heat the pineapple juice.

Soften the gelatin in the cold water then stir into hot pineapple juice.
Add sugar, salt, and lemon juice, then the crushed pineapple.
Cool and stir until the mixture is partially set.

Beat the gelatin mixture until foamy.
Beat the cream into stiff peaks and fold into the gelatin mixture.
Pour into a mold and set.

Last night I made Morrocan Vegetable Stew from a cookbook. If I get the chance, I'll post a picture of the result here!

I'm looking for a good recipe for homemade chocolate chip cookies, so if anyone has any suggestions that would be great. I could always just use the recipe on the bag of chocolate chips I got but I like to try different versions too

Ethiopian Dabo bread: traditional breakfast bread, serve with Coffee or Tea

Ingredients:
4 cups wheat flour
1 packet instant yeast
1 tsp salt
1 tbsp honey
2 cups warm water
1 tsp each of coriander, fenugreek, nigella sativa
2 tbsp oil

Directions:
1. Add the flour, yeast, and salt to a large bowl and mix together.
2. In a separate bowl dissolve the honey in the warm water then pour the honey water into the flour mixture.
3. Add the spices and the oil to the mixture. Using a spoon, mix the ingredients thoroughly to create a sticky dough.
4. Line a 9 x 5 inch loaf pan with parchment paper. Transfer the dough to the pan and cover for 20 minutes to let rise.
5. Preheat the oven to 390 degrees F. Uncover and bake for 40 minutes. Serve warm.

Chunky Monkey Banana "Nice-cream" (healthy alternative to ice cream)
2 frozen bananas
1 TBSP cocoa powder
1 tsp vanilla extract

Blend in blender

This is the no cook peanut butter fudge I like to make:

1 cup peanut butter
1 cup butter
1 1/2 TSP vanilla extract
2 1/2 powdered sugar
1/2 Cup chopped walnuts (optional)

Melt butter and peanut butter in large saucepan
Remove from heat
Stir in powdered sugar, vanilla extract and any mix ins you want (chopped walnuts for example)
Pour into buttered 8x8 pan
Refrigerate, then cut and serve

I'm making buffalo ranch chicken hoagie sandwiches later this week.. You put like 3-4 chicken breasts in a crockpot w/ ranch seasoning, a 12oz bottle of Franks Red Hot Wing buffalo sauce, and then shred the chicken once it's cooked, serve on hoagies

Later in the month I'm making cheesy cheddar garlic biscuits, the recipe is super simple. I've never made homemade biscuits before but it looks easy

It turned out really good. I need to cook more. This is the first home cooked hot meal I’ve made in several months. I normally just eat things like salads, protein bars/shakes, cereal and oatmeal.

If you do you might want to try egg noodles. That is what we put in ours at home. They aren't too thick. They're delicious!
