I just made some candied grapefruit peel. It is delightfully tart sweet. I do need to make sure I boil it enough next time prior to putting it in the sugar syrup because it is still a little teensy bit too much bitterness in this batch. I don't usually make sweets so this is a kind of an exciting experiment for me.

There are several versions of it. Basically it is blanched peel (blanched a bit to remove some of the bitterness) then cooked in sugar syrup for about an hour.

I really like grapefruit.
I also really like mincemeat. It is one of the few pies I like. I don't make it though because no one else likes it in the house and I don't need a whole mincemeat pie. I sometimes get those little tiny tarts and eat one a day throughout the holiday season but this year things were a bit discombobulated.

I'm not a fan of grapefruit.

I recently learned that mincemeat is not actual meat. I turned down a mincemeat cookie because "eww sick, what kind of person puts meat in cookies?" That is when I learned.

I think it originally had meat with spices, fruits and nuts back in the middle ages or renaissance. But now mostly currents and apples and so on with spices - although I have a recipe that calls for suet.

Tomorrow is my only day of work this week. Knee surgery on Tuesday, followed by excruciating pain for several days, and physical therapy for 6-8 weeks after. Doc says I'll be on my feet the same day, but a coworker who had it done says he lied, so hoping I won't be out of commission too long.

Hope you all had a wonderful weekend and that your Monday isn't too awful!

I had mincemeat pie once - homemade. I thought it was going to be sickeningly sweet and sticky, but it was surprisingly yummy and normal tasting.

I got triggered tonight. It was weird though. What triggered me and what I was thinking about a couple hours later... Odd. I'm not sure why of all times I was triggered tonight and these memories come back and not any other time I've had the topic come up or thought about it.

morning peeps . I see my T tomorrow for the first time after her break . she had asked me to think about a few things during the break . I have thought about them but have not come up with any meaningful thoughts about any of it at all. she asked if there was anything I wanted to work on this coming year and how can you expect someone who is loyal to you, such as your husband or I ,to white wash the abuse that happened to you . I DONT KNOW
